I arrived around 1PM on a day that they had an electrician scheduled for some work and were planning to close early. I told Alex that I had come out of my way specifically to visit them and knew what I wanted. She said as long as I wasnt bothered by the work going on, she would be glad to help me anyway. I really appreciated that, as I was only in town for the day from far out of state and probably wouldnt have another chance for a year.I was in to buy a yanagiba, an asymmetrical slicer mostly used as a sashimi bōchō. They had many beautiful choices across a broad range of price points available (I had a very flexible budget). Alex was very knowledgeable about nearly all of their options, though they work less closely with some makers than others. She knew that one makers yanagi have a higher likelihood to arrive a little less than straight, so we knew to check closely. She didnt rush me and didnt pressure me toward the higher-priced knives and paid attention to the specific features I was looking for in my new knife. She helped guide me toward a 300mm high carbon blade made by one of the master smiths, and then helped me find a beautiful black lacquered saya to protect it. I also picked up a pair of moribashi (Japanese cooking/frying chopsticks) and a bottle of tsubaki oil to protect my knife on Alexs recommendation.I was planning a large sushi dinner for the friends I was visiting in Walla Walla, so Alexs help and patience was invaluable to me on this trip -- and the knife was an excellent choice! I will certainly stop in again when Im in Portland and will always check with them first when I want a new blade.

Came in to get my first set of quality knives, and knowing nothing the guy working there spent allot of time teaching me about the different styles and purpose behind knives, needless to say I walked out with a beautiful new set of knives!

Fantastic experience! The manager (Will) patiently took the time to educate me on various factors about each knife. I spent about an hour looking & feeling out each tool/knife finding the right fit & balance for my personal needs. The customer service here is impeccable. No matter if this is your first time buying a knife or if this is your 50th knife purchase... Will is more than helpful finding what tool/knife is best for you & will patiently answer all your questions. I HIGHLY recommend Suisuke Knife!

If you love to cook, then youll need a quality knife and you really need to check this place out! i have not yet had the pleasure of going to their retail store, but i purchased a knife for my brothers birthday from seisukes online store and just had a really wonderful experience! the website is setup well, has a lot of information about each knife, and you can tell the staff are very passionate about their products and the craft involved with making and maintaining these knives. the staff are super resourceful, have lots of great information to share, and i appreciate the follow up after my order to make sure everything was ok. i look forward to the next time that Im able to visit Portland, and will definitely be stopping by this store!

Had them sharpen a knife of mine and they noticed that the wooden handle was dry and a little rough so they offered to go ahead and sand it down plus give it some oil to soften it up a bit and give it some shine. At no extra charge too! Service was prompt and the knife came back crazy sharp. I also took the knife sharpening class and found it to be super informative. Theyre very knowledgeable and have a lot of great tips for upkeep.

I love sending my knives to be sharpened at Seisuke. Quality and sharpness of the finish is superb, service is first-rate, and, with a very quick turnaround, the mail service is as good as I can get locally. When in Portland, stop by for a visit!

Unbelievable experience, when not being able to get my Visa card to work on their website, the manager, Will, out of the blue had the nerve to ask me who I was voting for. My response was that this has nothing to do with Japanese knives and it is none of his business. He was very derogatory and judgmental for no apparent reason and apparently he is on some kind of liberal social mission continuing the rioting in Portland. I do not have a desire to deal with businesses that judge people, based on social issues, my dealing with a merchant is a business transaction and should go no further than that. This cancel culture within this crazy business run by a crazy person who does not believe in equality is EXTREMELY UNPROFESSIONAL.

I first visited Seisuke about three years ago to have a few high quality Japanese knives, including one whose blade I had pretty badly nicked, sharpened/ repaired. They handled those excellently and quickly. The nicked one looked (and performs) as good as new. Since then, I have bought three even more beautiful knives from them, a double bevel nakiri, a kamagata usuba (single bevel, of course) and just last week a stunning Yoshimi Kato Damascus R2 steel petty knife. It doesn’t hurt that the folks that work there are super helpful and knowledgeable. Well worth a trip to visit the store (once the pandemic permits) or reliably and safely, buy on-line. I also love that that have sayas in just about every size and shape to protect your knives. Five Stars for sure!

The best selection of high quality chef knives in the city. Majority of the stock is hand-crafted in Japan. They also provide a sharpening service. They brought the edge back to my well-worn general purpose kitchen knife and now it slices better than ever!

I got my japanese HASAMI (ikebana shears) sharped and had the rust removed for a grand total of $13 plus $2 tip :) Lucky me, it was done in 24 hrs :) Will the Assistant Manager is very friendly and helpful; I cant wait to come back for fancy knives for my cook boyfriend!!
