Excellent selection of cooked and ready to cook sausages at fair prices. We got the following variety of cooked sausages: Smoked Andouille- very salty, Texalina Smoked- excellent, Smoked Beer Bratwurst- excellent, Jackalope (Pork Antelope Rabbit Smoked)- excellent, Duck Pork Smoked- excellent, Beef Jalapeno- extremely salty and bitter(due to dehydrated jalapeno?), Wild Boar- excellent, Venison Pork- excellent. In general, the sausages are very lean and high quality. The guy behind the counter was very friendly and helpful.[I diced up the bitter salty Beef Jalapeno sausage in homemade marinara sauce and simmered it for a 15 minutes, then poured it over penne pasta. It was very good and no longer bitter or salty.]Stocking up on sausages at Hudsons is a must when in Austin!

Fantastic sausage! The butcher is awesome, gave my dog a bone from an elk. Sold me some of the best jerky I have ever had.

Some of the best jerky Ive ever had. Best deal on beef bones for making bone broth. Which was the original reason I came here to shop. Picked up some great brisket burgers and am definitely going back. Really wish I had come here years ago. Check it out. Seriously. 😃🥰

Best meat processing in Texas probably the whole country. Ive had almost everything on their menu and have never been ever been let down. Every cut is beyond delicious. I drop off a few deer each year. Packaging is supreme. And the most friendliest staff you could ever imagine.. they make you feel like family. Dont waste your time processing any game anywhere else. This year I dropped off two deer (about a month apart) and got a phone call this morning that one was ready and I really hated to ask if I could wait for the other deer to be processed and make one pick up and they kindly excepted my request. Thats customer service! Cheers!

Real high quality stuff, I drive down from Dallas to come here. Everything here is good from the meat to the jerky. I have personally seen people bring in just fresh whole hogs and deer to get processed and sold, can’t get any fresher. Will be back very soon again yo buy some more.

I highly recommend Hudson for Deer or hog processing. I have used a few other places this year as well and none of them compare to the quality of what you get back for the price. Their customer service is top notch. I definitely recommend trying the Italian sausage!

Jerky is great. CustServ suspect. They acted like I was an alien when I walked in and they tried to look over me and serve the lady behind me and they still checked her out before me👀really. And people say Austin is liberal and discrim is absent👈🏾

I was trying buy some deer meat but 28 dollars for 1lB.! Did not Want to spend over 100 dollars for few pounds. So I decided to buy buy chicken breast. Cashier says one price which was reasonable price for the chicken bread but another guy there says double the price that the cashier had mentioned. Waste of my gas and time.

Dropped my Axis off for processing 4 weeks ago, the lead time was communicated as we were at the height of the season. I picked up my meat today and couldnt be happier with how the package turned out. I noticed the employees at Hudson dealing with impatient and hard customers. Yall need to understand the process that goes into this and what youre getting into when you drop your animal off during the busiest time of the year for game processing....especially the folks who dont quarter and field dress themselves. Top notch job, Hudson. Ill be back.

I dropped off two hogs at Hudson’s about two weeks ago for processing. The staff was very helpful, friendly, and were more than accommodating to fulfill my request, which was to simply quarter/break down the hogs into their components and give me back any trimmings to make sausages. I got the meat back a couple days ago, and overall I am happy with the work they did. The reason why it’s not a 5 Star review, is because they didn’t separate the cuts in different bags (tenderloins in one bag, shoulder in another, etc). Instead, they gave me 4 large bags, with various frozen cuts in each bag that simply say on them “TRIM.” Maybe it was a simple misunderstanding because I assumed they would do that, but next time I bring my game meat to them for processing I will specify I want each cut in separate bags.

UPDATE 12/31/19I had to take a few stars off for price. In years past I have taken hogs here and left a $50 deposit and when I would come back to pick up my meat the $50 deposit would almost always cover the cost of the processing or they would even owe me a few dollars back. This year I dropped a hog off and left a $65 deposit (no big deal) and then it received a phone call a few weeks later saying my meat is ready to be picked up and I have a balance of $95. Thats a grand total of $160 over a 200% increase of what I have paid in years past!!!! I understand prices going up thats the cost of doing business but 200% and not getting a single word of warning about the increase. Unfortunately next year Ill have to shop around for new processor.11/26/19They do a awesome job at a very reasonable price. Thought I was going to get gouged by taking my deer/hogs to get processed in Austin and was completely surprised. It was cheaper than other places I normally go. Fast turnaround and everything Ive gotten was awesome.

Hudsons deer processing crew is top notch. They have a checkout booth where you can choose what you want made. They unload your game for you. Their prices arent bad and it all tastes really good. Step inside and pick up some jerky or quail poppers for the smoker.

This was my first time working with Hudsons. This is certainly a step above the places I have used in the past. They have great options for how to have your game processed and have outstanding customer service as well. The prices are extremely fair as well. Cant wait to get the finished product back!

I visited Hudson Meats for the first time last week in my search for dry rub and beef jerky. Having visited the area once before, I assumed Hudson Meats was a wholesale meat processing centre with no retail shop. In fact, it is run like a family business with the original founder Bobby Hudson selling the operation to Barret Klein in 2007 who has managed to keep the family feel while modernising the operation.The retail shop is small offering dry rubs, artisan meat cuts, beef jerky (six variations from original to teriyaki including some ) and meat sticks. While the selection is limited, the quality is unmatched. The beef jerky is chunky, succulent and moist. The Smoked & Peppered Pork Tenderloin is short of amazing with rich smoky flavour. Price wise Hudson Meats is good value for the quality offered. There are cheaper options but the quality is worth paying for. The staff are Hudson Meats are not only incredibly knowledgeable and passionate but equally friendly and warm. My suggestion is to ask them for their recommendation. You will get great advice, some free samples, all delivered with a smile.For out of town folks like myself, Hudson Meats offers a pretty simple but good online ordering and shipping service. Hudson Meats is a great spot if you are after some quality meat and beef jerky.

You probably arent getting your meat back. But for sausage, does it matter? I love their garlic sausage and summer sausage. Top notch. Everyone seems pleasing when taking your order. Are they pricey, just as pricey as the next guy.

Very surprised by the Congress location, however, though this was in a very busy place, once we got there drop off was really easy. The folks working were super friendly and made everything really easy. We have been back a few times. Thanks !

Hudsons processed a deer for me, and everything Ive had has been wonderful. They do a really good job of cleaning the meat so that there is no gristle or tendons, etc. in the end product. I had them make dry, summer, regular, hot and jalapeno and cheese sausages with 20% pork adder, and its some of the best sausage Ive ever had. I also had them tenderize the backstrap, but I havent had a chance to try it yet.Also, the price for processing is reasonable, and the staff is very friendly and helpful.

I take my Elk and Axis there for years. Its about the only place that I can count on to do fantastic job every single time. The bacon wraps are phenomenal.

Hudsons is awesome!!!, friendly service, great location, great prices! We dropped off some Red Stag and a hog to have link sausage and dry sausage made, and hamburger made from the Red Stag with beef fat. OH MY LORD, EVERYTHING is the best Ive ever tasted. Im so picky on link sausage, usually buy V&V, but oh man, Hudsons was to die for. So tasty! The dry sausage is awesome too! The hamburger also, like i said everything is great. Hudson Sausage Company opened up a store front about a year or two ago and its a handy little meat shop. Their venison sausage is pretty legit. The jerky they do is also out of this world. I often go and buy a bunch to mail up to NYC to friends and family. Try the spicy beef jerky, its so thick and almost feels like cuts of steak instead of dry jerky. Real friendly people too.

Great product. However, after dropping off an order for processing a month earlier, I had to call and see if it was ready. Aparently my order had been completed 10 days earlier but no one ever called to let me know. Im hungry over here!

Hudsons venison sausage, brats, & Italian sausage are all really good. Have used Hudsons for years and have always been pleased. That is, until they gave us deer bones for our dogs. Trust me, DO NOT give these bones to your dogs!! These bones splinter and shatter, which they did with my golden. $500 in vet bills later, and 8 days of cleaning up uncontrollable vomit & diarrhea, the shards of deer bones scraped and perforated my dogs small intestines, large intestines and colon causing a severe infection and awful case of colitis. Get Hudsons sausage, but tell them they can throw the deer bones in the trash!!!

Been having my yearly venison harvest processed at Hudsons for decades. Their sausage is *awesome* and their service is fantastic. Hope they will be around for the next couple of decades!

Just moved to Austin early bow season and was looking for new deer processing facility. Found Hudsons conveniently located near work so I thought Id give them a try. No issues with staff on drop off and pick up. All were friendly and efficient. The 1 star is for the product. I tried summer sausage with J&C and the peppered deer brick. The SS was actually very greasy and pale. Doesnt even look like it was made with deer meat. I was please with the pepperd deer brick until I tried one that was labeled from Klein Smokehaus...WTH?! The quality of this one was not as good as the ones with Hudsons label but thats not the main concern. Main concern is there is something wrong with Hudsons product delivery. How do I end up with a product from Kleins Smokehaus located in Boerne when I dropped off my deer in Austin at Hudsons?!?! Did I even get MY deer back?!?! The search for a deer processor in Austin area continues!!
