This is literally some of the best food Ive had in a LONG time. Came here today for the first time with my beautiful fiancée and we will DEFINITELY be back!!! This is a true hidden gem! I wanna almost keep it to my self haha but hey, they fully deserve the best business!! The Cajun Mac with shrimp is bomb!! And the beignets and Monte Cristo are legit! Cant wait to try their gumbo with alligator!!! Thank you for existing!!!! Best food cart Ive had in a VERY long time!!!!

Some of the best food and service in Vancouver Washington! Friendly, absolutely delicious, knowledgeable about gluten-free and has gluten-free options. I’ve been eating here for years and it is a staple for my wife and I. We make some tweaks to our meals and they now have our special memorized and named. delicious New Orleans cuisine. My wife loves the shrimp pistolette, I usually get a modified étouffée with olives. Unbelievably delicious! Every. Single. Time. I can’t recommend this place enough!

I think this food cart is a hidden gem in Vancouver. Expect hot quality Cajun food! Ive lived in the south most my life and most the food here just brings back warm memories of the food I used to eat. Granted, I think its better than almost all of the homemade Cajun Ive had before! Alligator Po boy on Thursdays! Definitely recommend.

The first time we went the dishes were too salty. It was almost inedible. We assumed it was because we ordered smothered fries. Thought we would give the place another chance because the owners were very friendly and its rated 4.9 stars. The second time we went I was given maybe 6 pieces of shrimp on a lot of fries. Was not impressed. It wasnt super salty since we didnt order smothered the second time though.

Absolutely stellar. I ordered some food for myself and my coworkers today and we all loved every item we got! This is a must go to food cart for everyone! I will definitely be returning time and time again. Thank you guys!

Always fantastic, this food truck is the best Cajun food around! The rice is out of this world, always trying something new and everything is delicious. Monte Cristo and Pistolette are just perfection, so happy theyre in Vancouver, being next to BC is just a bonus on bonus!

I’ve been coming here for years. Everything is good, but the jambalaya and the boudin balls have a special place in my heart. Please take the time to get know the owner because she’s wonderful and does what she does because of the craft! Absolutely legit and the food is always made with love, don’t miss a chance to pick something up when you grab a beer at brothers cascadia!

When we found this food cart in Vancouver we had high hopes given the reviews. We ordered jambalaya and gumbo, although a bit skeptical when we learned they did not use okra in their gumbo. We were disappointed in our food. It was flat in flavor, lacking the richness and depth of authentic Cajun food. We are both southerners and acquainted with how Cajun food should taste. We had leftovers and my husband added appropriate spices and okra and ended up with a second round that was quite good. Would not recommend unless willing to reconstitute it.

Short answer: Friendly, fast and delicious 😋.If your still reading, whats more is that they offer great options that are not readily found nearby with taste of a dine in restaurant.

Im basing this rare five star rating on a couple of things. First of all the owners are fantastic people and actually listen to the input of their customers making alterations to the recipes until they have it dialed in perfect. This was the case with their chicken gumbo.Had I rated this little truck based on its gumbo the first couple of times I had it, I would have either given a three or four star at the most. However, the owners listened to my input and made changes to far improve the final product. It is Leaps and Bounds better than the original. Hats off to you folks.Im not a big fan of the other items on the menu but thats more personal preference than anything else. If you like their Style etouffee, then go for it. Not big on Po-Boys no matter who makes them and theyre fresh fried alligator was pretty good albeit saltier than I care for. Give this little truck a try. Im really glad I kept going back

Randomly had their special of the day almost a year ago the was simply rice and beans and it was so delicious I wanted to come back.Today we had the nachos and they were delicious. Perfectly spicy. Loved it

The food is really good and the owner is very nice! She offered to make me the Mac & Cheese even though they didnt make it that day. So far Ive tried the Nachos with Shrimp, Chicken Tacos, and Mac & Cheese. Everything has been 10/10 so far and Ill definitely be coming back!

First time this week. After growing up and being stationed in the south with the Navy, I can say this would be above average in Louisiana, but here in Vancouver, I know of no place that can come close to it.If youre a purist, this place is more Creole than Cajun so more Commanders Palace than Dooky Chase - but its really good nonetheless.

Homemade Dark Roux Gumbo was loaded with protein and didn’t have a bunch of okra as filler (has none actually). I had an off menu Po Boy that was otherworldly. So, I would make the assumption their shrimp one is fantastic as well. They know how to fry their food properly and with spice. Etouffee tasted like grandma’s. All in all, hands down best Cajun in Portland metro. Also good to meet a fellow Louisianaiana in the NW!

Really nice staff and service, not really impressed with the fare based on multiple visits. On my orders list for us were shrimp poboys, etouffee, pistolette, and shrimp-on-fries - the smothered fries were not offered on all 3 of my visits. The po boys - no pickles, no remoulade, zero bite to speak of, no heat (I have all three versions of Crystal in my cabinet), Asian farmed shrimp (I asked, buying from the nearby WinCo) - pretty much rated a wont buy this again from all of us. The etouffee had seven shrimp in it. The pistolette had eight slices of sausage and a few pieces of shrimp - was mostly soggy rice.I spend around $60 on two large meals for myself and my friends, plus tips. Im guessing that my meals cost the vendor around $7-10. The local WinCo also sells Gulf shrimp - they certainly werent in the food that I ordered.Five stars for the staff. Zero stars for the food.

Second time weve dined here and it was even better this time. The smothered waffle fries are dangerously good, riblets are a must try and the beignets are heaven! The owners are very sweet, Id definitely stop by again for the gumbo. Yall need to support your local businesses!

We had waffle fries, a monte cristo sandwich, and beignets, all tasty, all hot and fresh. A covered seating area beside the nearby (feet away from the food truck) brew pub let us eat outside in style and comfort. All in all a darn great place to be on a nice day (especially if you have a dog with you). Highly recommend.
